Whether it's for a nice family dinner, or something a little more romantic, Rosemary Grilled Pork Roast With Roasted Heirloom Carrots is definitely a meal that will please the mother-in-law and the romantic partner. The best part about this recipe is that you don't have to be a crazy good gourmet chef to make it happen. You just need some bacon fat, garlic, and a roast.  ...well I guess you need a grill too.

Rosemary Grilled Pork Roast

Serves: 4       Total Time: 80 Minutes

Ingredients

Rosemary Grilled Pork Roast

  • 1 pork roast, 1 1/2 - 2 lbs.
  • 2 tbsp. chopped fresh or dried rosemary or
    1 tbsp. dried rosemary, 1 tbsp. Italian seasoning
  • Salt and freshly ground pepper to taste

Roasted Heirloom Carrots

  • 1 lb. of heirloom carrots, about 10 to 12 medium sized white, yellow, deep orange and purple carrots
  • 1 1/2 tbsp. bacon fat, or butter will do
  • 1 clove of garlic, pressed
  • salt to taste

Directions

Step 1
Preheat your grill to 450°F. You will be using both direct and indirect grilling, so you only need 1 burner on.
Step 2
Roll your pork roast in the fresh or dried herbs, pressing them into the meat, including the salt and pepper.
Step 3
Sear your meat on all sides, starting with the fat side down. When each side has lovely grill marks on it, move the meat to the off side of the grill, onto a some aluminum foil with its edges turned up to catch the drippings. Turn the burner down to medium-low.
Step 4
Scrub or peel your carrots, remove the tops and slice them into sticks. Melt the bacon fat / butter and toss the carrots with it. Once the carrots are coated, lay them in a Stainless Steel grill topper, or onto a baking sheet, then onto the grill over the indirect side too.
Step 5
The carrots take about 30 to 45 minutes and are done when a fork easily pierces them. The roast should be finished in 45 to 60 minutes, when an instant read thermometer says 160°F.
Step 6
Use the drippings to make gravy by pouring them into a small saucepan over medium-low heat. Add 1 tbsp. of flour (may need more) to make a paste. Slowly add 1 cup of stock to the flour mixture, thoroughly combining the two each time. Keep adding stock to the fat and flour mixture until you have the perfect gravy consistency for you. If it's too thin, bring the gravy to a simmer until thickened, too thick, add more stock.
Step 7
Serve everything together, you may want to add a starch like potatoes or sweet potatoes, but adding another favorite veggie like brusseles sprouts is also great.
