with Fresh Guacamole
Grill the steak over direct heat
- 4 steaks, approximately 3.5 oz. each
- Club House La Grille Southern Style BBQ Seasoning
- 1 red pepper
- 1 green pepper
- 1 hot pepper of your choice
- 1 medium red onion
- 1 tbsp. cooking oil
- 2 cloves garlic
- 1 medium sized, ripe tomato
- 8 10–inch tortillas
- 300 g. mozzarella cheese, shredded, (1 small brick)
- Napoleon cast iron frying pan
- Fully Loaded Guacamole for serving
- salsa and sour cream for dipping and spreading
Preheat your grill to 350°F. Preheat your SIZZLE ZONE™ side burner to high. - If you don't have a side burner, one or two burners on to high and preheat your grill to 500°F+.
Chop the peppers and onion. Put them into the frying pan, on the grill, with the oil. Close the grill lid and allow the peppers and onion to cook for about 5 minutes, or until they begin to char and cook through.
Chop or crush the garlic, and chop your tomato, when the other vegetables are about half way done, add the garlic and tomato. Tomato gets very mushy when overcooked, and garlic goes bitter. Cook for another minute or so.
Pat the steaks dry with paper towel, then season well with the Southern Style BBQ Seasoning. Sear the steaks directly over high heat for about 2 to 3 minutes per side. Move them to the "off" side of the grill to finish for about 5 more minutes.
Allow the steak to rest a bit after removing them and the veggies from the grill. Turn up the heat and turn on all the grill burners to medium. Turn off the SIZZLE ZONE™ if used.
Slice the steak into strips. Layer cheese, veggies, and steak slices over half of a tortilla. Top with more cheese and fold the tortilla in half. Repeat with the remaining ingredients.
Use the Napoleon BBQ Pizza Spatula
to easily move the filled tortillas onto the grill. Grill one side for about 3 minutes, or until char marks form and the cheese starts to melt.
Use the BBQ Pizza Spatula to help you flip your steak quesadillas, and continue to cook over direct heat with the lid down, for another 3 to 4 minutes.
Use a big knife, or a pizza wheel to slice the steak quesadillas into thirds.
Serve with sour cream, salsa, and guacamole. Don't forget the napkins.
