Rotisserie Rack of Elk is an easy and incredibly flavorful recipe, perfect for holiday eats or a nice weekend dinner. Elk has a deep flavor, a combination of lamb’s earthiness and beef’s … beefiness. Using the rotisserie to slow roast this cut will result in meat that is beyond tender. (I am pretty sure we could have cut these up with a spoon.) Simple seasonings allowed the elk’s pure flavor to be showcased and enhanced by the smokiness from grilling.

Rotisserie Rack of Elk

Serves: 4       Total Time: 1 hour 30 minutes

Ingredients

  • 1 rack of elk 
  •  salt and pepper to taste 
  •  1 tsp. garlic powder 
  •  1 cup of beef stock

Directions

Step 1
Before beginning, check to see if the rack will fit onto the grill without the need to remove the cooking grids. If you have to remove the cooking grids, determine if you will be using the grill to cook the sides as well. Keeping the rack of elk to one side of the rotisserie burner will allow you to keep a set of grids in the BBQ for grilling up side dishes. Preheat the grill to 450°F using the rear burner.
Step 2
Pat the rack of elk dry and season generously with salt, pepper, and garlic powder. Thread the first set of forks onto the spit rod followed by the rack. Thread the final set of forks onto the rod and press the forks into the meat to hold it securely in place either centered on the spit rod or closer to one end of the rod. Tighten the thumb screws and check the balance. Add the counterbalance as needed.
Step 3
Place the spit onto the grill with a baking dish underneath filled with 1 cup of beef stock. Cook the rack of elk for 10 to 15 minutes on high until browned and crispy. Turn the rear burner down so that the grill’s temperature will lower to between 325 and 350°F.
Step 4
Cook your rack of elk on low for another 30 minutes before checking with an instant read thermometer. A thicker or larger rack will take longer, however the meat is done at an internal temperature of 140°F for medium. When inserting the probe, be careful not to touch metal from the rotisserie or bone.
Step 5
When an internal temperature of 140°F is reached, remove the elk from the grill and rest for 10 to 15 minutes, tented under foil, before slicing and serving with your favorite side dishes.
