You can’t have a ham dinner without scalloped potatoes. Or at least that was the case during my childhood. They always came from a box and had the same bright orange color as Kraft Dinner. These Cheesy Grill Baked Scalloped Potatoes with Goat Cheese and Parmesan, however, are totally different. More flavorful than ever imagined, and perfectly paired with sweet Glazed Ham and a green vegetable of some sort. Serve this on a holiday, or just for the heck of it. This recipe is a lot easier than you think.

Cheesy Grill Baked Scalloped Potatoes

Serves: 6       Total Time: 1 Hour 35 Minutes

Ingredients

  • 8 fist sized, yellow flesh potatoes, sliced into 1/8-inch thick slices 
  •  1 onion, sliced thin 
  •  2 tsp. salt 
  •  1 tsp. freshly ground black pepper 
  •  1 tsp. dried dill 
  •  3 tbsp. butter + for greasing the baking dish
  • 3 tbsp. flour 
  •  1 tsp. dried mustard powder 
  •  2 cups of milk  
  • 1 cup of extra old cheddar cheese 
  •  ½ cup soft goats cheese 
  •  ½ cup of freshly grated parmesan cheese

Directions

Step 1
Preheat the grill to 400°F.
Step 2
Use a mandolin to slice the potatoes and onion, or carefully use a knife to slice the vegetables.
Step 3
Toss the potato slices and onion with the salt, pepper, and dill. Grease a baking dish with butter, then stack the potatoes and onion together vertically in the baking dish.
Step 4
Melt the butter over medium low heat. Add the flour and mustard powder, whisking until combined. Cook the flour mixture for 2 to 3 minutes to develop flavor, before slowly adding milk about ¼ cup at a time. Whisk the milk into the flour mixture completely each time. The first few times, the flour mixture will turn into a doughy, clumpy mess. This is okay, it will help make the whole mixture smooth, less likely to separate.
Step 5
Once the milk has been fully incorporated, allow the mixture to heat until it begins to thicken, or comes to a very gentle simmer. Once there, add the goats cheese and most of the cheddar.
Step 6
Pour the cheese mixture over the potatoes, then top with the parmesan and remaining cheddar.
Step 7
Bake, using indirect heat, for 1 hour, and up to 20 minutes longer if needed for the potatoes to cook through, or the top to get crispy and bubbly.
Step 8
Serve with your favorite meal.

Cheesy Grill Baked Scalloped Potatoes with Goat Cheese and Parmesan took a family dinner staple and turned the volume up to 11! Aside from having to wait for it to finish cooking, this recipe was about as easy as it could get. Serve this at a holiday meal and you will have some pretty happy guests.
