Pecan Butter Cups
Homemade Chocolate Candy Is Easy

Gather your ingredients
- 1 cup Homemade Vanilla Bourbon Pecan Butter
- >½ cup powdered or confectioner’s sugar (scant half cup)
- 400 grams, about 3 1/3 cups of chopped 60% dark chocolate
- 2 cups milk chocolate, chopped
Place 24 cupcake wrappers on a baking tray. I really recommend silicone baking cups for this; they peel right off when you’re ready to eat.
Bring some water to a simmer over your side burner, or you can use the stove instead. You want a very gentle simmer. No boiling water here!
Chop the chocolate into small chunks and place them in a heatproof bowl that will fit, supported by the pot rim, just out of the simmering water. Unless you have a double boiler, then use that to melt the chocolate gently.
Use a spatula to stir the chocolate occasionally as it melts. Be careful not to let the chocolate burn to the bottom of the pot, but you don’t need to stir it constantly.
While the chocolate is melting mix half of the confectioner’s sugar into the Homemade Vanilla Bourbon Pecan Butter. Give it a taste and texture test. You want to be able to form the pecan butter into a ball, and you definitely don’t want it too sweet. If it needs more, slowly add the sugar to the pecan butter until it’s more like crumbs that will stick together when pressed, but still not too sweet.
Turn off the heat and remove the bowl/pan with the chocolate. Place 1 tbsp. of chocolate into the bottom of each of the baking cups. Pick up each cup and rotate it a little to make sure that that the bottom is evenly covered and some of the sides are too. Holding the edge of the cup with both hands drop each filled cup straight down onto the counter or a baking sheet to ensure that the chocolate is leveled and free from bubbles. Put the remaining chocolate over the still hot water while you do the next step.
Make a small disc of pecan butter mixture that is just a little smaller than the bottom of the baking cup. Place a pecan butter disc in each of the baking cups.
Cover the tops of each pecan butter disc with another tablespoon of chocolate. Pick each one up, and rotate before plopping down on the tray just like before.
Chill the cups in the fridge or freezer until set, about 20 minutes. Serve immediately.

Pecan Butter Cups are so amazingly delicious. We made only twelve to begin with, ate one, and decided immediately make more. Like most of the cooking in my house these will be long gone by the time you read this. These are gluten free and egg free if you are worried about allergens.
