Bacon Chocolate Chip Banana Muffins

When you slice your newly homemade bacon, you invariably get bits, chunks, slices that aren't pretty, and leavings. You can't just toss these little scraps. That would be offensive. You would be arrested by the Bacon Police for crimes against the bacon! That's where these Bacon Chocolate Chip Banana Muffins come in. I used some of the bacon ends in these delicious breakfast muffins that do more than smell delicious. They're fairly healthy, you can make them gluten free and egg free easily. There is little sugar in these too. Until you add the chocolate chips. But if you're REALLY being health conscious with these bacon-full muffins, craisins are a great addition instead.

Bacon Chocolate Chip Banana Muffins

Serves: 1 Dozen       Total Time: 35 Minutes

Ingredients

  • 2 ripe bananas
  • 1/2 cup of all natural peanut butter
  • 1 tsp. vanilla extract
  • 1/4 cup of brown sugar
  • food processor or blender
  • 3/4 cups of oatmeal
  • 3/4 cups of whole wheat or gluten free flour
  • 1 tbsp. baking powder
  • 1 tsp. salt
  • 1 1/2 tsp. cinnamon
  • 2 tbsp. ground flax seed (optional)
  • 3/4 cup of chocolate chips or chunks
  • 3/4 cup of cooked bacon, chopped

Directions

Step 1
Spray a muffin tin with nonstick. Preheat your grill to 350°F, prepare for indirect grilling.
Step 2
Chop the bacon and fry it in a pan, until crisp. Drain it on paper towels.
Step 3
In a food processor, spin the oatmeal until it is a fine crumb, not quite the texture of flour, but not quite whole flakes any more. In the bowl of a stand mixer, mix the bananas, peanut butter, sugar, and vanilla. You can also use a potato masher or pastry blender to do this. Add the flour, oatmeal, baking soda, salt, flax seed, and cinnamon.
Step 4
Gently stir in the chocolate chips and bacon.
Step 5
Spoon about 1/4 cup of the batter into your prepared muffin tin. If there is batter left, top up all of the muffins, they don't rise very much. Don't forget to garnish a few with larger bits of bacon.
Step 6
Bake over indirect heat for 15 to 20 minutes, or until the muffins feel set but spongey.
Step 7
Allow them to cool before serving if you can.
Bacon Chocolate Chip Banana Muffins freeze well, and are fantastic served warm when the chocolate is melty. They're dense, and very filling. Satisfying and scrumptious. You could definitely make these with raisins and nuts instead of bacon and chocolate chips, but really what is the fun in that? What is your favorite thing to pair with bacon?
