Strong, warm, gooey, melty and chocolaty

Coffee & Caramel Brownies happened because I needed chocolate. You don’t understand. It’s not that I have a craving. It’s more like a requirement. At that moment in time, I required strong, warm, gooey, melty chocolate. So I decided to make brownies. 

Coffee brings out the best in chocolate 9 times out of 10, so obviously, I had to add some espresso powder to jazz things up a bit. Actually, I also added some plain greek yogurt to give these brownies even more oomph too. Then, to top everything off, I capped these brownies with a heaping helping of caramel sauce. The result? Delicious, strong, warm, gooey, melty chocolate brownies!

The best thing about being an adult is that you can eat whatever you want for dinner. The other night, neither of us felt like eating a meal, meat and potatoes, pasta, nothing at all sounded good. You know what did though? Apple Crumble with Ginger Infused Maple Syrup. Fresh apples, sweet maple syrup with spicy ginger, and cinnamon, and top it all off with fresh ice cream for a delicious meal… I mean dessert!

The idea for White Chocolate and Peppermint Tart came about shortly after making the  Chocolate & Espresso Tart. I was writing the recipe to share, and suddenly it hit me. What if I used white chocolate?! From there the recipe evolved as I considered what would taste great with the white chocolate. Initially, I had a vision of a beautiful white tart with swirls of green and crumbles of peppermint on top. Things went a little sideways when I accidentally overheated the white chocolate and it bound. (That means that chocolate went from this smooth and creamy mixture to a hard and grainy blob.) I was able to fix it a little, but the liquid separated out. To rescue this, I topped the whole thing with a layer of dark chocolate ganache. Feel free to make this look however you like, though. Swirl the white, dark, and mint chocolate together, or layer them all separately. It’s up to you and how you feel this dessert should look.

I made this Chocolate & Espresso Tart as part of a menu for some VIP’s. It seemed like the perfect finish to an already rich meal, consisting of an autumn salad and Duck Pizza. I had a little difficulty with the texture of the chocolate. So, remember when you make your own, to be careful when melting the chocolate, not to heat it too hot, too fast. Strange things happen to chocolate when it’s heated too fast. My chocolate went sort of sticky and doughy, but it can sometimes go grainy, or clumpy too. The secret to a silky and beautiful tart is patience when you melt the chocolate.

I don’t know about you, but I am a big fan of the whole chocolate and coffee combo. With National Dessert Day coming up, I just had to make a dessert befitting the occasion. Mocha Cupcakes with Smoked Coffee & Toffee are a perfectly portable dessert that even the non-coffee lovers will enjoy. (I say this while looking pointedly at a few people, you know who you are…) Topped with even more chocolate, toffee bits, and coffee-chocolate ganache, who wouldn’t go nuts for these Mocha Cupcakes?

This is our third brownie recipe in 3 months; that definitely constitutes a brownie kick. Who can resist these dense bars of chocolaty goodness? I, for one, can’t. Neither can my friends who requested another batch of brownies for our Sunday night gathering.  These Mexican Style Brownies with Dark Chocolate and Chillies are just the thing for National Hot and Spicy Day on August 19th. Thick and dense chocolate brownies, balanced with out with the right amount of sweetness, they sneak up and bite your tongue with a warmth that is as unexpected as it is pleasant.
