It’s become a tradition to make hot sauce as a holiday gift for friends, and my Homemade Hot Sauce With Roasted Garlic & Cayenne was a huge success again this year. This sauce isn’t overly vinegary, instead relying on the intense cayenne pepper for punch. Easily adjust the heat of this recipe by subtracting hot peppers and adding sweet bell peppers, which also bulk up the sauce without watering it down. The roasted garlic and blistered skin of the peppers add a hint of smoke to the finish, giving this hot sauce flavor along with the heat.

There's a bit of a story with these Fried Catfish Tacos With Spicy Sour Cream And Avocado Coleslaw. When I was a lot younger, back in my picky eater days, I was watching a show whose main characters were focused on a Mexican family and fish tacos. They were obsessed with fish tacos. I couldn't dream of ever contaminating my tortillas with fish! Fast forward many years, and I have to try making these tacos. What happened? I still remember the revulsion of my younger self. However, I am now older an adult and have more adventurous tastes. Right? Honestly, these were delicious. The fish was crispy on the outside, well seasoned inside. The coleslaw with cheese on top, ohhh and the cream sauce bringing it all together... It was fishy heaven wrapped in a tortilla. Or something. Eat it yourself. You will understand.

A few weeks back I made Glazed Duck With Spicy Fried Rice for dinner. There's something about this Asian-inspired meal that marries the delicious spice of the rice with a sweet glaze on the duck for a meal that covers all of the bases. The rice is full of veggies so you don’t necessarily need to make more.  Although the more veg the merrier!  This is a very filling meal – one duck breast will feed you well.

Sweet Chili Shrimp is a great appetizer or meal, depending how you serve them. These little guys surprise the palate with their initial sweetness, then kick it in to high gear, finishing with a little fire. Ooooh, I am on fire describing these shrimpies aren't I? When I help with photo and video shoots at work, I love ensuring the food is good enough to eat afterwards. We wanted something colorful and tasty looking for a new accessory that we're working on, and I created quite the ticket with these shrimp. With the sauce and their cooked to pink perfection, they looked great on film, and when we were done everyone got to enjoy a taste.
