I’ll be honest, this recipe happened for two reasons. One, I happened to immolate the roasted beet and asparagus side dish that I was going to serve with my Espresso Rubbed Prime Rib. Two, I went WAYYYYY overboard when making some carrot cake for dessert. Luckily that meant that I had loads of perfectly shredded carrots for a Carrot Salad With Creamy Dressing, Feta, Raisins, and Cranberries, which turned out to be a delicious side dish.

While shopping for ingredients, I found a package of black garlic. “What is that?” you may ask. Well, black garlic is whole heads of garlic that have been fermented in a process that is a lot like dry aging meat. Black garlic generally has a sweeter taste than fresh garlic, which makes it perfect for this tasty treat. I made Roasted Potato Salad With Black Garlic Vinaigrette when I decided that I wanted something a little different than a creamy potato salad. Looking through my pantry of spices, I spied the black garlic I had just purchased and things just happened from there.

To celebrate Roasted Chestnuts Day, I had to try roasting chestnuts over an open fire. That’s a song isn’t it? Anyway, after roasting a big bag full of these yummy beauties I needed to do something super festive with them. Holiday Stuffing with Grill-Roasted Chestnuts and Sausage seemed like a great way to use these freshly roasted nuts to their fullest potential. I’ve made these Maple Dijon Roasted Carrots a few times. It is the dish most often requested when I offer to bring something to family functions. This is a side dish that adds a bright pop of color to your table. The deep roasted flavor of the carrots pairs perfectly with whatever dish you serve. You can use regular carrots, go fancy with young carrots with the green tops still on, or even get really crazy and use brightly colored heirloom carrots.  However you slice or peel them, this side dish is de-lilsh!

You know, some of my best recipes come from somehow messing up. Getting the wrong ingredient, not having all of the ingredients, or some other such mishap. That’s how Fully Loaded, Crispy, Potato Salad came about. I realized that I only had baking potatoes when my husband had a hankering for potato salad one evening. I figured everything would be alright, so I proceeded as normal. I peeled, sliced, and boiled, but I wound up overcooking the potatoes. To save things, I decided to make them crispy potatoes. After that decision, I wound up undercooking the eggs too! This was fine with me, but definitely not in accordance with the way you make potato salad. As I see these ingredients coming together I decided to roll with it. What’s better with eggs than bacon? I was also using baking potatoes, so under all that crunchy outside was a light and fluffy inside, another perfect place to put bacon. When all was said and done, it was like eating forkfuls of baked potato and breakfast wrapped into one, delicious, summery, side dish. It was amazing.

Roasted Mashed Potatoes With Paprika & Aged Cheddar are super simple but pack a huge punch. I know that my Irish Grandfather is weeping as he reads this because "potatoes are good on their own and don't need any help!" but let me tell you. Paprika, smoke, aged cheddar = help! You can make these ahead, which is what I did, and then finish them off on the grill while everything else is keeping warm. Also, having extras to share, reheat, and re-eat is so awesome.

These Plank Smoked Mashed Potatoes have officially become my favorite way to prepare potatoes! In preparation for the holiday season, I made a Christmas Goose with all the trimmings. That means that you need Mashed Potatoes and vegetables and gravy too. When making Mashed Potatoes for planking, it’s best to do them up the day before. This is some super secret special technique that Ted Reader taught me ages ago. Try it for yourself and you will see why.
