Slow Roasted Leg of Lamb

Slow Roasted Leg of Lamb

on the Rotisserie

Posted on November 02, 2016
The rotisserie is possibly one of the best grilling accessories you can have. Cooking a Slow Roasted Leg of Lamb on the Rotisserie makes for one succulent meal indeed. Savory spices, roasted garlic oil, and a little patience went a long way to making this family dinner an enjoyable one.

PRO TIP: Remove the grids and sear plates, place Napoleon's Cast Iron Charcoal and Smoker Tray on the burners and use some lump charcoal and wood chips to give your lamb that delicious charcoal flavor.

Chocolate Rubbed Back Ribs

Chocolate Rubbed Back Ribs

on the Rotisserie

Posted on October 25, 2016
Chocolate doesn’t just have to be for sweet dishes and desserts. These Chocolate Rubbed Back Ribs are proof of that. The rub, light smoking, and use of the rotisserie combine to create the most uniquely flavored ribs that I’ve ever tasted. A crisp outer layer followed by super moist and flavorful pork makes these some ribs to remember. Using the rotisserie was a different technique and it was a great success. Try this recipe when you want to do something completely out of the norm. These ribs will break you out of your rib-rut.

Rotisserie Leg of Lamb

Rotisserie Leg of Lamb

with Stuffing

Posted on March 24, 2016
Rotisserie Leg of Lamb with Stuffing is a roast that is out of the ordinary in many ways. I bought the cut of meat knowing that the bone was removed, but didn’t realize that the whole thing had been more or less butterflied (duh). Having that available space gave me an idea for a very delectable meal. Usually I would crust the outside of the lamb with savory herbs, but this time I wanted to fill the inside! So I created a quasi-stuffing with some panko and herbs, then tied everything up, and seasoned the outside very simply. Using the rotisserie the outside of the Leg of Lamb caramelized, and in the end, we ended up with a beautiful looking, delicious dinner.

Lebanese Beef Shawarma

Lebanese Beef Shawarma

With Tahini Sauce

Posted on August 25, 2015
The success of the Chicken Shawarma recipe made me realize how delicious Shawarma can be. I wanted to make it again, but I also wanted to make a meal that was just a little different too. Lebanese Beef Shawarma With Tahini Sauce fit the bill exactly, using some traditional spice combinations you can take beef to a whole new level. The only thing we didn't have was the fries to go in the pita. But man was this  ever some good food.

Actually, having just moved into our new home, my husband and I have had some issues with appliances and unfinished stuff (new build), so having nowhere to put our dishes for the most part left us in kind of a pickle. A pickle that is solved by making food that is portable. I know, all my pretty dishes seem to be making it onto the site okay, and I guess I could use paper plates and what not, but there's no fun in that! I want to make the food work for me! So we did.

Rotisserie Prime Rib

Rotisserie Prime Rib

With Basil Garlic Baste

Posted on April 22, 2015
April 26th is National Prime Rib Day. What an excellent excuse to indulge and make yourself some Rotisserie Prime Rib With Basil Garlic Baste. Prime Rib is not the least expensive in the world, so having a holiday where you can indulge without feeling bad about it is flipping fantastic. I paired this aromatic crusted, melt in your mouth, beefiness with my favorite potato dish, Potato Galette, and served it with amazing gravy made from the pan drippings.

Kebabs On The Rotisserie

Posted on November 04, 2014

Rotiss-kebabs - Kebabs On The Rotisserie, you asked and shall receive! What better way to introduce a nifty accessory than with a nifty recipe too! This recipe for Kebabs On The Rotisserie is super simple and will please everyone. Customize your meal, and everyone else's. Just provide some marinated meat and chopped veggies and let your family and guests do all the work! I used the Szechwan Sauce from Szechuan Smoked Ribs On The Apollo for this recipe, but feel free to use your own favorite. I used the Napoleon Rotisserie Shish Kebab Wheel  for this. It evenly cooked the food and provided easy access for basting. It's also a fantastic conversation piece. Definitely a must have if you've got a rotisserie kit for your grill.
