Did you know that Prime Rib has a day to celebrate its delicious perfection? Well, I did, and in preparation for this hallowed day, on April 27th, I prepared some Espresso Rubbed Prime Rib for dinner. Rubbed with a combination of steak spice, salt, and espresso powder, then slow roasted on my Prestige PRO 500 Gas Grill, and seared to crispy perfection; this Prime Rib made a most delicious dinner.

Oh, look - Another cheesecake recipe! YAY!! This time I made White Chocolate Cheesecake With Fresh Raspberries, in honor of National White Chocolate Cheesecake Day. (Not that I needed an excuse to make cheesecake at all, but having one is always helpful.) This recipe is chock full of deliciously creamy white chocolate, the tart raspberries adding a bright freshness to the whole thing. Super Fluffy Chocolate Chip Pancakes, another take on Japanese Pancakes, these pancakes are larger than life and twice as delicious. Serve topped with maple syrup, chocolate syrup, fruit sauce, or whipped cream and you will have the best breakfast ever. Definitely only need one of these to fill the void, that’s for sure.

Coffee & Caramel Brownies happened because I needed chocolate. You don’t understand. It’s not that I have a craving. It’s more like a requirement. At that moment in time, I required strong, warm, gooey, melty chocolate. So I decided to make brownies. 

Coffee brings out the best in chocolate 9 times out of 10, so obviously, I had to add some espresso powder to jazz things up a bit. Actually, I also added some plain greek yogurt to give these brownies even more oomph too. Then, to top everything off, I capped these brownies with a heaping helping of caramel sauce. The result? Delicious, strong, warm, gooey, melty chocolate brownies!

Captain Crunch Chicken Fingers, there's a story behind this one. I have been a very lucky person. When I was younger, my father took me to Europe. We stayed in Paris for a couple of days before going to Euro Disney and then London via the Chunnel. While in Paris, we ate at a Planet Hollywood. I was horrified to see the chicken fingers, my go to meal was breaded with Captain Crunch, my all time favorite cereal. Back then I was picky. I have learned much since then. Ever since then, I have had that thought pop into my head periodically. Could I? Should I? Well I finally did it. I finally had enough bravery to give it a try. This recipe, these Chicken Fingers... Are. Just. Amazing.
