Maple Garlic Chicken is delicious. Super garlicky, sweet, and sticky. It goes great with just about anything you can think of to serve with it. A fresh salad with a tart and vinegary dressing pairs well, so do roasted potatoes, all salty and crisp.  This recipe is great for any chicken cut, from drumsticks to thighs, whole legs, and even breasts. Just remember to keep that skin on, because that is where the flavor is at.

Homemade Soup with Roasted Carrots and Ginger is the product of my ever-increasing confidence, apparently, soup isn’t that hard to make. This particular recipe is even easier than … umm… something really easy! Okay, so it’s not as easy as using the can opener and making a can of condensed soup unless you are can opener challenged, or have one of the electric ones that never seems to work. However, this soup recipe is way easier than making our recipe for the Easiest Rotisserie Chicken Ever (and that’s a super easy recipe).

To celebrate National Lager Day, I decided to make something that I haven’t tried in a long while - Beer Marinated Lamb with Chimichurri. Okay, let me clarify. I’ve made loads of lamb after falling in love with this meat when I started working on this blog; however, I haven’t tried chimichurri in a while. Not being a fan of cilantro, it’s kind of obvious why. I figured that my tastes have expanded and evolved since making Ted Reader’s Mesquite Planked Leg of Lamb. Still not a huge fan of cilantro, or chimichurri, but the lamb was cooked to perfection, and the lager marinade made up for that.

I wanted to make a meatless meal that was rich and satisfying. I was at a loss, searching until I saw a title - Goat Cheese Risotto and my search was over. I just went from there, adding roasted red peppers, a couple kinds of cheese, peas, and fresh herbs until I had a filling dish that would be suitable for both a side dish and a full meal. In the end, this meal was so much better than I could have imagined.

I’ve made these Maple Dijon Roasted Carrots a few times. It is the dish most often requested when I offer to bring something to family functions. This is a side dish that adds a bright pop of color to your table. The deep roasted flavor of the carrots pairs perfectly with whatever dish you serve. You can use regular carrots, go fancy with young carrots with the green tops still on, or even get really crazy and use brightly colored heirloom carrots.  However you slice or peel them, this side dish is de-lilsh!

So it was National Sausage Pizza on October 11th. Not a big deal. Just another day dedicated to pizza. HA! I know, I’m funny. There is nothing better than pizza. Okay not true. Homemade pizza with garlic and cheese and sausage and more sausage with additional cheese, THAT is better! Piggy Pizza is my take on the classic meat pizza that’s been taken up a few notches.

I have been itching to do this recipe for some time, however Grill Baked Pierogies with Lamb and Vodka Cream Sauce just never seemed to make it onto my weekly schedule of things to cook. Until now. My friend Jeffrey, gave me the base recipe and said that I should “go to town” with regards to meat and sauce choices. When I brought him the leftovers he polished them off with delight, saying that I had made them even better than he usually does. This from the man who made this pierogie recipe into an art form. I recommend eating this meal on your cheat day because, trust me, you’re going to want to eat a lot of it.
