I’ll be honest, this recipe happened for two reasons. One, I happened to immolate the roasted beet and asparagus side dish that I was going to serve with my Espresso Rubbed Prime Rib. Two, I went WAYYYYY overboard when making some carrot cake for dessert. Luckily that meant that I had loads of perfectly shredded carrots for a Carrot Salad With Creamy Dressing, Feta, Raisins, and Cranberries, which turned out to be a delicious side dish.

This Easter season, try a light and fresh Lemon & Blueberry Cake for dessert. This confection tastes as good as it looks, and boy does it ever look good! The light lemony flavor of the cake pairs perfectly with the tart blueberries. The cream cheese icing just makes it all even better. I served this to finish off a beautiful family dinner. Everyone made room for this cake after eating their fill of dinner - and whomever you serve this too, will as well. This cake is so ideal for the season; it even smells like spring.

Never will you ever have a more delicious dinner than this Mongolian Beef With Sweet Snap Peas! We really enjoyed this. We were hard pressed to get enough photographs that we could safely begin eating. Trust me; make this with the intention of eating it, because waiting for any reason is going to be tough. (UNLIKE the notoriously tough, flank steak that you will eat in this recipe.)

(Not that I needed an excuse to make cheesecake at all, but having one is always helpful.) Anyway, after roasting a big bag full of these yummy beauties I needed to do something super festive with them. Holiday Stuffing with Grill-Roasted Chestnuts and Sausage seemed like a great way to use these freshly roasted nuts to their fullest potential. This dish is a great side for any roasted poultry based family dinner.

Thai Peanut Pork Tenderloin really broke this tenderloin out of the rut it was in and created a beautiful meal. There is nothing better than a loaf of fresh bread. Well…. Okay garlic bread made from a loaf of fresh bread could tie for the top spot of nothing-better-ness. That’s why I made Hassleback Style Garlic Bread On COBS Bread Sunflower Flax Sourdough. The bread was super fresh and smelled soooo good! It was all I could do not to go all “my precious” on it. I did wind up sharing the bread with other people at dinner, much to my chagrin. Though, they did enjoy it, so I guess that makes up for having to share.

Grill Roasted Salmon

My husband ate a lot of fish growing up. I did not. At all. So, it's been slow going getting into the seafood thing, but we are getting there. As you can see, Salmon is my favorite and this Grill Roasted Salmon With Fresh Herbs & Feta was absolutely amazing. Fragrant fresh herbs and creamy zippy feta top a meaty salmon fillet. When served with some Crispy Roast Potatoes (just add some fresh dill and a squeeze of lemon) it's perfect.
