After another quiet Halloween, we ended up with a ton of chocolaty treats. What better way to use up leftover candy than to make a Chocolate & Peanut Butter Cake With Reese Peanut Butter Cups. This dense and rich cake is bracketed by light and fluffy layers of peanut butter icing, topped with chopped peanut butter cups and drizzled with silky ganache. After making Homemade Lasagna, I found myself with a lot of leftover ricotta cheese. What better way to use up the extra ricotta than to make a Chocolate Cheesecake with  Maple Pecan Topping? Instead of my usual Cheesecake Recipe, I added ricotta for a more "Italian Style" cheesecake. Inspired by National Chocolate Pecan Pie Day on August 20th, I also added the crust from my Salted Maple Pecan Bars, as well as the topping. This cheesecake recipe has to be the richest one to date.

Thanksgiving and autumn are a time for cozy foods and pumpkin flavored everything. I will admit that I have never liked even the thought of something pumpkin flavored, however I thought that it was about time that I finally acquiesced and made something pumpkin. Pumpkin Pie Cheesecake With Sugar Cookie Crust was actually very good. I will admit to being skeptical, but it turned out that the taste reminded me of gingerbread for some reason. Anyway. Thanksgiving needs Pumpkin Pie, so here you go. Sort of.

You can't finish your perfect Thanksgiving meal without dessert, and what better way to usher in autumn than with Spiced Carrot Cake With Cream Cheese Icing! Imagine a dense cake, scenting the air with the fragrance of fall, ginger, cinnamon, nutmeg. It's moist but not crumbly. It's perfectly topped with thick layers of sweet cream cheese icing. This is a cake to remember and could you believe that I made it on the grill?

 

Baking time varies widely from cake pan to cake pan, so I recommend checking at the 20 to 25 minute mark, and every 5 to 7 minutes afterwards. My cake pan was 6x6x3-inches and it took nearly 45 minutes for the cake to be completely done.

I don't need a reason to have cheesecake. I could have cheesecake every day, no matter what. That's probably why there are more than ten recipes for cheesecake, or cheesecake related desserts on this blog. Red Velvet Cheesecake With Cream Cheese Icing seemed like the next logical step in cheesecake recipe making. I had two reasons to make this. One, it's National Cheesecake Day, and you HAVE to have cheesecake on National Cheesecake Day, and two, I wanted to make something special for a friend who really helped us out. In both I believe that I've succeeded because dang! This cheesecake was amazing.
