I’ll be honest, this recipe happened for two reasons. One, I happened to immolate the roasted beet and asparagus side dish that I was going to serve with my Espresso Rubbed Prime Rib. Two, I went WAYYYYY overboard when making some carrot cake for dessert. Luckily that meant that I had loads of perfectly shredded carrots for a Carrot Salad With Creamy Dressing, Feta, Raisins, and Cranberries, which turned out to be a delicious side dish.

When having a big family dinner it’s always nice to do a big roast – in this case a pig roast! Ha. On this particular occasion I found myself with a lovely butterflied roast of pork. I decided to create a Pork Fatty Stuffed With Bacon & Apple for our meal and, aside from a minor incident involving a lack of potatoes; the meal was a total success. I can hear you asking about the potato thing. I thought we had a whole bag of mini potatoes. I only had 12 to feed 8 people. Then, a few of them burned while I was cooking; Disaster! Though the meat and veggies were delicious, which made up for it.

Autumn Baked Brie With Apples, Cinnamon, Pecans, and Cranberries is a cheesy, gooey, delight. Feel's kind of high brow, and can be served as an appetizer with wine, or as a dessert, with wine. I guess you don't have to serve it with wine, but yeah. The wheel was a buffalo brie from Prince Edward County. It wasn't strong like brie cheese tends to be, but mild and salty, pairing beautifully with the sweetness of the apples and brown sugar, and the tartness of the cranberries.

Allergen Free Muffins. I'd love to say that these came from a desire to make something special for a friend who has a special diet, but no. I had no fruit to go in my yogurt, and had no ingredients to make my Oatmeal Date Muffins, or any normal muffins at all for that matter. Seriously, I needed to figure out what to make because I had no eggs either! I couldn't even make a quick omelette or anything! But I needed breakfast so I made due with what I had on hand. Did you know that you can substitute ground flax for eggs in a recipe? In the end, these moist and filling muffins wound up being delicious and shareable!

And the best part is that you can pretty much put any kind of oats you have in there too, steel cut, quick cooking, whole, you name it. The sweetness of the apples and the tartness of the cranberries is all you need, and this Flourless Apple Crisp makes for a light and tasty end to a good meal. Or you could eat it for breakfast.

It's also known as Christmas Crack because it flies off the plate, sells out instantly at bake sales, and disappears at pot lucks. Be sure that you're wearing riot gear and have snuck a stash for yourself before bringing this out over the holidays.
