Pfeffernüsse

Pfeffernüsse

German Gingerbread Cookies

Posted on December 21, 2016
I made these cookies to celebrate National Pfeffernüsse day. When I read that there was a day dedicated to Pfeffernüsse, I got thoroughly excited. You see, my cat - whose name is Hubert, is nicknamed Pfeffernüsse. I don’t know how it happened, or when, but there you have it. He’s round and white and brown, much like these cookies, not that I knew what they were until I saw that there was a date dedicated to this uniquely named confection. Pfeffernüsse or German Gingerbread Cookies, are delicious, fragrant, spicy, and sweet. They’re ideal for celebrating the holiday season, when a little extra warmth is always welcome.

Gingerbread

Gingerbread

Make a whole village of cookie people

Posted on December 14, 2016
Gingerbread is an integral part of the holidays, like lights, trees, and hot chocolate. Ever since I started working on this blog, I have wanted to do one thing. Make a Gingerbread Grill. Yes, a Napoleon Grill made of Gingerbread. My husband, a total genius, did the math and plotted out the parts, but in the end, the project was far too ambitious. The grill would have stood well over 24-inches tall! Instead, we opted to go with the more traditional Gingerbread Men, who turned out beautiful, delicious, and festive in their red jumpers.

NOTE* - You will want to use a stand mixer for this recipe unless you are very strong and have a lot of stamina. The dough gets pretty stiff near the end.

Super Healthy Banana Muffins

Super Healthy Banana Muffins

With Oatmeal and Flax

Posted on September 08, 2016
In my quest for super healthy and portable foods for consumption in the office I found many recipes, but they all had one flaw or another. Too moist, too dry, too tasteless. These Super Healthy Banana Muffins have it all though. They taste like those muffins you can get in stores, only they pack a super healthy punch from the flax; and a super foods kick from the coconut oil. These muffins are filling and smell wonderful too. You need to try these as soon as possible.

Maple Rum Apple Turnovers

Maple Rum Apple Turnovers

They’re like apple pop-tarts!

Posted on July 06, 2016
To celebrate National Apple Turnover Day I made Maple Rum Apple Turnovers. Really, who doesn’t need a day dedicated to these flakey, sweet, could-eat-them-for-breakfast, little hand pies? I can’t decide if it was laziness or my easily distracted nature that lead to this recipe. I was just cooking away when I noticed that I had left a bottle of Kraken out. It was “Oh, hey, rum! Let’s add that”. The rest, as you know, is delicious history. Really. They’re gone. All of them. Yum.

Pumpkin Pie Cheesecake

Pumpkin Pie Cheesecake

With Sugar Cookie Crust

Posted on November 19, 2015
**This recipe makes 2 pies!**

Thanksgiving and autumn are a time for cozy foods and pumpkin flavored everything. I will admit that I have never liked even the thought of something pumpkin flavored, however I thought that it was about time that I finally acquiesced and made something pumpkin. Pumpkin Pie Cheesecake With Sugar Cookie Crust was actually very good. I will admit to being skeptical, but it turned out that the taste reminded me of gingerbread for some reason. Anyway. Thanksgiving needs Pumpkin Pie, so here you go. Sort of.

Sweet Potato Flower

Sweet Potato Flower

Quite the tasty looking dish

Posted on November 17, 2015
This Sweet Potato Flower is as pretty to look at as it is tasty. A little fiddly to make, but well worth it when people are in awe of your grilling prowess. I thought of this recipe because I already had mashed potatoes and mashed turnip on the menu for Thanksgiving dinner. I just couldn't do another mashed dish. Instead I created something that was both visually stunning and pretty dang tasty if you happen to enjoy sweet potato.

Apple Cider Donuts

Apple Cider Donuts

With Cinnamon Sugar Dust

Posted on November 03, 2015
National Donut day is coming fast, and you can't celebrate without having donuts. As we're currently obsessed with Angry Orchard Apple Cider, Apple Cider Donuts seemed like the next, perfectly logical step. Like my first attempt at Homemade Donuts, I made these for us, and a couple friends, this time, there was only one left.

These donuts are slightly cakey, but fried and crunchy on the outside with a light fluffy interior that reminds me of those tiny donuts that you get in the mall. You know the ones. I tossed them in a cinnamon and sugar mixture, mostly because I ran out of time to do a glaze, but it worked out really well, giving a little extra texture to these delicious donuts.
