To celebrate National Chocolate Day on October 28th, I created three savory dishes that prove Chocolate isn’t just for dessert. You can check out my Chocolate Rubbed Back Ribs and Chocolate Rubbed Steaks here. After experimenting with a few different applications of chocolate in savory food, it was decided that I had to use the real thing in a dish. Also, it’s nearly November, something warming, like a stew, was definitely needed as well. This Spicy Chili with Dark Chocolate is the strangest chili that I have ever made, though it is certainly the most delicious. If you need a warm bowl of yum on a cool day, you need to try this chili.

Chocolate doesn’t just have to be for sweet dishes and desserts. These Chocolate Rubbed Back Ribs are proof of that. The rub, light smoking, and use of the rotisserie combine to create the most uniquely flavored ribs that I’ve ever tasted. A crisp outer layer followed by super moist and flavorful pork makes these some ribs to remember. Using the rotisserie was a different technique and it was a great success. Try this recipe when you want to do something completely out of the norm. These ribs will break you out of your rib-rut.

Roast chicken is an easy way to prepare a family dinner to celebrate a major event like Thanksgiving. It’s also a more economic option to buying a whole roasting turkey which can get a little expensive. Roast Chicken Injected with Sweet Chili & Butter came about when I wanted to do something a little different with my side dish, Roasted Acorn Squash with Chili and Masala. The cinnamon, nutmeg, and cumin blended beautifully, pairing well with the heat from the roasted squash. The sweet chili and butter injection kept the meat ridiculously succulent.

Roasted Acorn Squash with Chili and Masala is an easy and beautiful side dish that’s perfect for an autumn dinner or for celebrating Thanksgiving. There is just something about roasted vegetables that adds a little extra something to your meal, and the smokiness from the grill gives this Indian spiced squash dish a whole new dimension of flavor.

This is our third brownie recipe in 3 months; that definitely constitutes a brownie kick. Who can resist these dense bars of chocolaty goodness? I, for one, can’t. Neither can my friends who requested another batch of brownies for our Sunday night gathering.  These Mexican Style Brownies with Dark Chocolate and Chillies are just the thing for National Hot and Spicy Day on August 19th. Thick and dense chocolate brownies, balanced with out with the right amount of sweetness, they sneak up and bite your tongue with a warmth that is as unexpected as it is pleasant.

Chili Glazed Salmon is sweet and caramelized, the perfectly grilled salmon, flaking easily when you touch it with a fork or tongs. Pair this with your favorite seasonal veggies for a quick and easy meal that will knock your tastebuds into next week. I threw together the glaze for a video shoot. I wanted to make the salmon look super succulent, and it totally worked. When I got home and served this for dinner on a bed of rice, with a little extra sauce, the husband was blown away.

Planked Spicy Lime Chicken

Seeking something different the other night, I found myself looking for a way to use the lime I had and some chicken thighs that I pulled out of the freezer. Planked Spicy Lime Chicken just kind of happened and it turned out to be very delicious. Smoky paprika and chili powder combine with the smoke from the cedar plank to create a sweet taste that is balanced out by the juicy lime sauce.
