I’ll be honest, this recipe happened for two reasons. One, I happened to immolate the roasted beet and asparagus side dish that I was going to serve with my Espresso Rubbed Prime Rib. Two, I went WAYYYYY overboard when making some carrot cake for dessert. Luckily that meant that I had loads of perfectly shredded carrots for a Carrot Salad With Creamy Dressing, Feta, Raisins, and Cranberries, which turned out to be a delicious side dish.

Homemade Soup with Roasted Carrots and Ginger is the product of my ever-increasing confidence, apparently, soup isn’t that hard to make. This particular recipe is even easier than … umm… something really easy! Okay, so it’s not as easy as using the can opener and making a can of condensed soup unless you are can opener challenged, or have one of the electric ones that never seems to work. However, this soup recipe is way easier than making our recipe for the Easiest Rotisserie Chicken Ever (and that’s a super easy recipe).

Feeling a little bored with plain old pork roasts, I jazzed things up by adding a little sunshine. Actually I used oranges and lemon pepper, but the effect was the same. This Citrus Glazed Pork Roast With Ginger Carrots tasted like eating sunshine. It completely brightened dinner time and added some much needed zing to mealtime.

I made Easter Dinner last week so that you were good and prepared. But it also happened to be Passover on April the 3rd of 2015. As a food blogger, I feel that it's my duty to make food that represents all people and cultures, and pay respect to the food they eat and why it's eaten. I made this Lemon Rosemary Chicken With Honey Basil Roast Carrots for Passover, and hopefully I did this right. 

 

Now I was supposed to make a roasted chicken for this meal, however when I opened the packaging, I discovered that my beautiful, properly prepared, kosher, organic, chicken had gone rancid! Such as the case, we had to improvise. Lucky for us, there were some chicken breasts in the freezer. I can't guarantee that they were prepared in the proper fashion, but we made do with what we had. The rest of the meal I was careful. I did not mix dairy with meat at all, nor did I incorporate flour or leavening agents into the meal. So all in all, aside from the chicken and my camera battery dying, I believe this was a success.
