How to make sourdough starter

I don’t know if you noticed, but I am a little obsessed with sourdough bread. Farmstead Sourdough Bread is possibly the best thing you will ever create. If you love bread, and sourdough, as much as I do, then having an endless supply available is going to be the greatest thing ever. I mean, I am already counting down the minutes until I can make more. 

I was blessed with a gift. A friend of mine bestowed upon me some of her own starter, which she has been cultivating for seventeen years! SEVEN-TEEN-YEARS! I was given instructions that were fairly basic. No metal shall touch the starter or it will be kaput (metal kills the bacteria). Keep it in the fridge, feed once per week with 1:1 water and flour. Pull the starter out 24 hours before you want to bake, keep at room temperature for those 24 hours, and feed it after you have used the starter to bake.

Sourdough Bacon Stuffing is the only thing in this year's Thanksgiving dinner that contained gluten. I made it with fresh sourdough bread, and I had bacon out to make the Fully Loaded Baked Mashed Potatoes, so I used the leftovers in this recipe. 

 

I never stuff the bird when I use stuffing. There are a lot of factors that lead to that decision. Mostly I don't feel that I get a proper cook out of a roasted bird. There is risk of contamination of the stuffing from uncooked drippings, and most importantly, you don't get loads of crunchy bits, leading to fights among guests and family over the coveted crispy stuffing. Feel free to stuff your turkey, or chicken, or not. But whatever you do, enjoy the stuffing.

Bacon is a treat for some. For others, myself and the husband included, it's weekend required eating. When asked what she would like to eat after a successfull Girl's Night In, my firend really wasn't up for eggs. What can I say, it was a big Bison Steak dinner! But, the thought of bacon was too much to turn down so instead I decided on BLT's for breakfast. So here I am prepping the ingredients, mulling over the acronym "BLT", I suddenly thought G.L.T!! Lightbulb! Grilled Bacon Lettuce And Tomato Sandwiches! YES! They were exquisite, by the way.

Three Cheese Grilled Cheese With Roasted Red Peppers, Bacon & Onion happened by accident. Yep. The cheese just landed like that and layered into a perfect sandwich with the roasted peppers. Okay, not really. But I was standing in the kitchen wondering what the heck I was going to grill, considering I forgot to pull out some meat before going to the gym that morning. My eyes alighted on a sourdough loaf lounging there on the counter, beckoning me to just slice it and eat it right then and there. And I thought to myself that would make some pretty darn good grilled cheese. So I opened the refrigerator, and noticed that, not only did I have some cheddar, the best cheese ever, but I had goat cheese and Monterey Jack too. Rummaging further, looking for the butter, I saw peppers and an onion, lazily sitting there, being all good for nothing. Actually the pepper was pointing at the bacon, hoping not to be noticed itself I guess. So bacon joined the growing ingredients list too. I needed something to serve to guests on a Sunday evening, and I also needed a nutritious breakfast for the next day. So I decided to make some Candied Pecan Banana Bread. This quick bread recipe is not only moist and tasty as any banana bread should be, but it's actually full of things that are pretty good for you too. I used gluten free flour and you couldn't tell the difference, which is rare, and the candied nut topping gave you a satisfying crunch to top it all off. You'd never guess that this was made on the grill. Oh, did I mention that it's also versatile as heck too? You can throw it in a loaf pan for quick bread, muffin tins, mini loaves - which make fantastic little gifts, and even a cake pan if you wanted. You just have to remember to watch that baking time.

This decadent and filling food had a fantastic balance of salty and creamy, the juicy asparagus had just the tiniest crunch to it and the sourdough toast just makes everything magical.
