Red Wine Chocolate Cake

Red Wine Chocolate Cake

with Wine Soaked Berries, Red Wine Ganache, and Creamy Frosting

Posted on March 07, 2017
Red Wine Chocolate Cake with Wine Soaked Berries, Red Wine Ganache, and Creamy Frosting is a mouthful, both to say and to eat. This double layer cake is rich with a light frosting to compliment the dark flavors. This cake was at once dense and deep, while light and tart, the cream frosting tying everything together nicely. I made this recipe gluten free so that a friend could enjoy it with us, and you couldn’t even tell that it was. If you want to celebrate spring, add this recipe to your menu, you won’t be disappointed.

Taco Dip

Taco Dip

Scoopable cheesey tacos!

Posted on January 31, 2017
Introduction: Any big game day needs a big and bold dip to go with it. Taco Dip is the cheesiest, most taco-y dip you will ever enjoy. Baked until bubbling and hot, filled with ground beef, and topped with jalapeños and cilantro, you won’t be able to resist scooping up copious amounts of this delicious delicacy. Be sure to have a super bowl of tortilla chips for serving this hot dip; it will definitely score you a touchdown. The best part is that you can make this gluten free recipe in advance.

Pfeffernüsse

Pfeffernüsse

German Gingerbread Cookies

Posted on December 21, 2016
I made these cookies to celebrate National Pfeffernüsse day. When I read that there was a day dedicated to Pfeffernüsse, I got thoroughly excited. You see, my cat - whose name is Hubert, is nicknamed Pfeffernüsse. I don’t know how it happened, or when, but there you have it. He’s round and white and brown, much like these cookies, not that I knew what they were until I saw that there was a date dedicated to this uniquely named confection. Pfeffernüsse or German Gingerbread Cookies, are delicious, fragrant, spicy, and sweet. They’re ideal for celebrating the holiday season, when a little extra warmth is always welcome.

Salmon Casserole. I know you’re thinking that something’s fishy here, but I can assure you that this easy dinner is super delicious. This meal is hot and comforting. Serve it family style at the table with a selection of seasonable vegetables, or a hearty salad.

Peach Pie

Peach Pie

with a Malibu Twist

Posted on August 25, 2016
Following National Eat a Peach Day is National Peach Pie Day on August 24th. You won't be able to resist this Peach Pie with a Malibu Twist! Sweet peaches are given a bit of a boozy boost with a splash of Malibu Rum original -with coconut, or try the banana flavored one. You will eat at least 3.14 slices before you ever consider stopping. Get it? It's a pi joke! Anyway, this round dessert will find a place of honor on your make-again list for sure!

Chocolate Cheesecake

Chocolate Cheesecake

with Maple Pecan Topping

Posted on August 25, 2016

After making Homemade Lasagna, I found myself with a lot of leftover ricotta cheese. What better way to use up the extra ricotta than to make a Chocolate Cheesecake with  Maple Pecan Topping? Instead of my usual Cheesecake Recipe, I added ricotta for a more "Italian Style" cheesecake. Inspired by National Chocolate Pecan Pie Day on August 20th, I also added the crust from my Salted Maple Pecan Bars, as well as the topping. This cheesecake recipe has to be the richest one to date.

Mexican Style Brownies

Mexican Style Brownies

with Dark Chocolate and Chillies

Posted on August 16, 2016
This is our third brownie recipe in 3 months; that definitely constitutes a brownie kick. Who can resist these dense bars of chocolaty goodness? I, for one, can’t. Neither can my friends who requested another batch of brownies for our Sunday night gathering.  These Mexican Style Brownies with Dark Chocolate and Chillies are just the thing for National Hot and Spicy Day on August 19th. Thick and dense chocolate brownies, balanced with out with the right amount of sweetness, they sneak up and bite your tongue with a warmth that is as unexpected as it is pleasant.

Homemade Lasagna

Homemade Lasagna

Homemade Lasagna With Meat and Three Cheeses

Posted on July 27, 2016
My favorite meal to share with my husband’s family is his mother’s lasagna. It is a fond childhood memory. I remember my own mother making it years ago too.  As it happens to be National Lasagna Day, I decided to pay homage to our fond childhood memories, and made my own Homemade Lasagna With Meat and Three Cheeses. I started with my Mother-in-Law's recipe, then I put a bit of a grilled spin on it, but I think you’ll like the results as much as we did.

Strawberry Stuffed Brownies

Strawberry Stuffed Brownies

in Mini Cast Iron Skillets

Posted on July 27, 2016
I may be on some sort of brownie kick. Does two brownie recipes in 3 months constitute a kick? Anyway, I made these Strawberry Stuffed Brownies in Mini Cast Iron Skillets because I had just made fresh strawberry jam. Somehow this very precise jam recipe made extra on our last batch and we ran out of jars. I just had to use it for something super special, my homemade strawberry jam deserves it. So what goes better with strawberries than chocolate? NOTHING!
