However I happened to have a butt load – this is an actual unit of measurement – of pork belly waiting for me to turn it into something incredibly delicious. When having a big family dinner it’s always nice to do a big roast – in this case a pig roast! Ha. On this particular occasion I found myself with a lovely butterflied roast of pork. I decided to create a Pork Fatty Stuffed With Bacon & Apple for our meal and, aside from a minor incident involving a lack of potatoes; the meal was a total success. I can hear you asking about the potato thing. I thought we had a whole bag of mini potatoes. I only had 12 to feed 8 people. Then, a few of them burned while I was cooking; Disaster! Though the meat and veggies were delicious, which made up for it.

I have had a heck of a time finding ribs this summer season, but fall came knocking and suddenly there are ribs on sale almost every week! Finally ribs! Immediately I bought a few. I did the rub thing, but wanted a little something different this time around. Although to be honest the Maple Bacon Ribs are still my biggest request and absolute favorite. So I soaked some apple wood chips in Angry Orchard Cider, then smoked the ribs until tender. Then I made a spicy sweet sauce from Cattle BoyZ Sweet Chilli Sauce and oddly enough, Dr. Pepper. What I ended up with was Smoky Ribs With Dr. Pepper & Chilli Sauce, and they were awesome.

I like to make it count when I use the smoker. I mean you're there for the long haul, anywhere from 4 to 16 hours and sometimes longer. And if you're going to commit to that amount of time, you may as well get a lot out of it. So when we made Homemade Smoky Southwest Bacon, I also made sure to have some other things that could be smoked at the same time. I had some wings in the freezer, and wasn't sure what I wanted to do for dinner. But Smoked Chicken Wings sounded mighty good when you're sitting there smelling that meat smoking. That's how Smoked Chicken Wings With Bourbon Hot Sauce came about. Well the smoked wings part anyway. 

 

The sauce was sheer mishap. I didn't want to cheap out and get some store bought stuff, so I thought I would just throw together a sauce. Only, it didn't work out very well at all. My balances were way off in the beginning. But after adding a little of this and that, and a healthy dose of bourbon, I ended up with a lip tingling-ly good sauce.

Homemade Smoky Southwest Bacon is da bomb! Okay I say that everything I make is the best thing ever, but this! THIS! This bacon will be, undoubtedly, the bestest, most awesome, heavenliest, amazariffic thing you have ever tasted in your entire life. That is if you're into bacon. So we've done planked bacon, and homemade bacon, but there is so much more you can do with bacon, than bacon. Or just subtly changing bacon into tastier bacon. Does that make sense? If not, just make this recipe. You will understand the nirvana that is bacon when you finish it. 

I must say that waiting the 10 days for it to cure was possibly the hardest thing we have ever done. But when you have homemade bacon and compare it to the stuff you get in stores, there is nothing even close. It's like eating unseasoned, low grade, ground beef and calling it a steak, and then having someone prepare you a filet mignon, done to a perfect medium rare. You're not going to turn back from that.
