Pineapple Rum BBQ Glazed Chicken

There’s nothing more delicious than pulling a perfectly prepared rotisserie chicken off the grill. That is until you open your grill and pull out the Pineapple Rum BBQ Glazed Chicken and serve it with some spicy Pineapple Fried Rice. Allowing the rear burner to crisp the bird up before you start glazing creates a succulent bite that won’t be beat! The Pineapple Rum BBQ Glaze is sweet and tart, with a hint of heat, that pairs just perfectly with this chicken, but will also go wonderfully with pork. Serving this with some spicy Pineapple Fried Rice was a stroke of genius…okay so I ran out of potatoes, but I wouldn’t serve this recipe with anything but rice after trying it, and trust me, you won’t either.

Yaki Onigiri is a very popular snack or takeout food made from rice formed into triangle or cylinder shapes, served wrapped with nori (seaweed) paper. Yaki means grilled or cooked To celebrate Rice Ball day on April 19th, I needed to try my hand at such a popular dish. They turned out fantastic, and I quickly got a handle on forming the sticky rice into a shape that resembled the pictures of Onigiri that I have seen. Traditionally Onigiri is stuffed with pickles or other sour things like pickled Umeboshi (Japanese salt plums), salted salmon, kombu (pickled seaweed), pickled tuna flakes, or salted Pollock. Feel free to substitute any of these for the chicken if you want to go super traditional.

Tomato Risotto With Feta And Grilled Chicken was a bit of an accident. Well, not accident but more of an "oh no, we're out of ___ what do we cook?" kind of thing. So there I was - having pulled out chicken for dinner without thinking about it. When I went to cook that evening I realized that I didn't have the ingredients to make any Sesame Chicken, and really wasn't feeling like slapping some BBQ sauce on the chicken and calling it a day. But I had some leftover rice, and a basket of cherry tomatoes...where did those come from? Anywho, after a little digging, I found a few more random things that would go well together, and suddenly dinner happened. It was delightful!
