Fajita Mix

Fajita Flair

Posted on February 18, 2014
Fajita Mix is perfect for chicken, but goes well with beef and pork for sure. Use it when you need to add a Mexican flair to your meal.

Ghost Pepper Chili

Ghost Pepper Chili

So good it's spooky!

Posted on November 19, 2013

I asked my readers out there what I should do with the Ghost Peppers that I managed to finally get my hands on. Ghost Pepper Chili was the most suggested recipe and I am happy to oblige. Fresh vegetables and grilled beef make up the bones of this dish, but watch out, it bites back! I really suggest that you serve your Ghost Pepper Chili with a dollop of sour cream, some cheese or a tall and cold glass of milk. Alright, it's not that hot. Most hot-heads will be calling me a wimp, but I like to taste the food I eat. This chili will make your cheeks glow, and if you're sensitive, your nose run. But that's about it. But DANG it tastes good.

Pulled Pork Carnitas

Pulled Pork Carnitas

With Garlic-Dill Sour Cream

Posted on August 19, 2013
What a super tasty take on a Mexican classic. I love my meat, and after making that Pulled Pork for the first time, I think that it's one of my favourites. That and the Maple Bacon Ribs. But I would love some other ideas on what to do with it! What do you do with the Pulled Pork that you make?

Salsa Chicken

Salsa Chicken

With Cheese And Sour Cream

Posted on June 10, 2013
Craving something on the “different” side of things? I sure was. It was also one of those “what do I have laying around” kind of days. I had chicken thighs and everything to do fajitas… except for tortillas and peppers. Okay, so not everything to make fajitas. Actually I didn’t even have fajita spice. So what now?

Grilled Date Cake

Grilled Date Cake

with Caramel Pilsner Sauce

Posted on August 13, 2011
Similar to Sticky Toffee Pudding of Scotland, this gooey, tooth rotting, sweet treat is awesome. The beer adds a whole new dimension to the caramel sauce flavor, and the dates give a weight to the cakes that make you feel like you had a lot, when you only ate a little.

Grilled Back Bacon on a Bun

Grilled Back Bacon on a Bun

with Maple Beer BBQ Sauce

Posted on June 27, 2011
I was at the Tragically Hip concert in Bobcaygeon on Saturday. What a great show! The weather was not the greatest, but the food! OH the FOOD!  So much to choose from, and all of it great! One of the best things there was the back bacon on a bun. Usually I would slap an egg and some cheese with back bacon, or at least some hollandaise sauce, but this was some sort of barbecue sauced grilled heaven. I was bound and determined to find a recipe for it when I got home, and slept for most of the next day.
