Homemade spaghetti sauce is the ultimate comfort food in my home. Both my mother and father have mastered the marinara, and each have their own unique way of making it. Funnily enough mom is of Irish descent, and father is English/French Canadian - how this Italian food staple became a fixture on the dinner table I will never know. What I do know is that it’s my favorite comfort food. I love to make gigantic batches and freeze it for later. This Grill Roasted Tomato Sauce is a grill-tastic vegetarian version of my childhood favorite and a great way to sneak those veggies in to a meal.

My fantastic grandmother served this salad one evening with dinner. Cucumber Salad with Balsamic Vinaigrette is supremely light, and packs a flavor punch that you are not expecting. Adding the onion and carrots elevates this side from possibly pickles to positively divine. It is unexpected and fresh. It would make a great topping for a turkey or veggie burger, or perfect for pretty much any meal where you need a quick and light side.

To celebrate the pecan, a most wonderful nut that has it’s own day on the calendar, I made some Pork Chops Stuffed with Apples and Pecans. I love pairing pork with sweet flavors, and pairing apples and pecans together makes perfect sense too. Add Honey Hickory Seasoning rub on the pork with a honey Dijon cream sauce, and you have a match made in grilling heaven.

I love pecans, so when I heard that they have their very own day - April 14th by the way; I just had to make some extra recipes to celebrate. I generally have peanut butter in the house for making Peanut Butter Banana Bread and Peanut Butter BBQ Sauce, but it got me thinking...What if you made peanut butter out of pecans instead of peanuts?? After some research, and a little innovation, I grilled up some pecans and turned them into Vanilla Bourbon Pecan Butter. The deep nutty tone is slightly sweet, and super perfect for just about everything you would want a nut butter for! Do you want to know the best part? It takes NO time at all to make!

We wanted an easy and fast dinner, and after indulging quite a bit recently, I wanted something a little lighter. The sweet sauce caramelized on the salmon; which we served on some sticky rice with a light cucumber salad, the perfect light meal.

This Mint Chocolate Cake was supposed to be for a birthday, but was nearly two weeks late due to a lack of kitchen (long and funny story). The wait was worth it! Imagine biting into a dense and moist cake that is perfectly chocolaty, discovering bits of minty cookie and then luscious hints of dark chocolate. That’s what this cake is like. I didn’t think that it would be big enough for my husband and I to enjoy for more than a few days. (You know we’re intense chocoholics) This cake? It lasted us over a week, and that’s with sharing over half of it with friends! You will love this chocolate cake; especially if you’re a fan of mint and chocolate together.

Rotisserie Leg of Lamb with Stuffing is a roast that is out of the ordinary in many ways. I bought the cut of meat knowing that the bone was removed, but didn’t realize that the whole thing had been more or less butterflied (duh). Having that available space gave me an idea for a very delectable meal. Usually I would crust the outside of the lamb with savory herbs, but this time I wanted to fill the inside! So I created a quasi-stuffing with some panko and herbs, then tied everything up, and seasoned the outside very simply. Using the rotisserie the outside of the Leg of Lamb caramelized, and in the end, we ended up with a beautiful looking, delicious dinner.
