One of the most loved appetizers of all time is the deep fried Blooming Onion. Only thing is that there are a couple problems inherent in making them. They’re deep fried, so there are all of the calories, and they’re breaded, so some people will end up missing out on the deliciousness. Not so with these BBQ Bloomin’ Onions! Gluten-Free, and not deep fried, but barbecue baked to beautiful deliciousness, these BBQ Bloomin’ Onions are gloriously caramelized on the grill. If done correctly, the onion flavor deepens and becomes sweet. Serve with a delicious steak, or as an appetizer.

If you’re creative enough just about anything can become pizza. Gourmet Steak Pizza on Cheese, Herb & Garlic Mini Focaccia proves that. I used very fresh ingredients for this recipe, and you can taste the difference. The tomatoes served as the sauce instead of using a traditional tomato sauce. I did this because I didn’t want to top the cheesy goodness of the fresh herbed focaccia with anything that would mask its delicious flavor. Instead, I enhanced the delicate herb and cheese flavor by adding succulent steak slices and red onion.

Marinated steak served on a sizzling bed of fresh veggies, cradled in cheese, and wrapped in a delicious blanket of flour tortilla goodness. What I am describing is a staple in our household. What I am describing is   Steak Fajitas On The Napoleon Cast Iron Skillet, with La Grille Roasted Garlic & Peppers Rub. It's a mouthful to read and trust me it's a mouthful to type; but completely worth it in both cases because you need to hear about this! This celebration of Mexican-like flavors is the perfect and simplest dinner for Cinco De Mayo celebrations. Add some cervezas and you have a match equal to queso and jalapeños.

Homemade spaghetti sauce is the ultimate comfort food in my home. Both my mother and father have mastered the marinara, and each have their own unique way of making it. Funnily enough mom is of Irish descent, and father is English/French Canadian - how this Italian food staple became a fixture on the dinner table I will never know. What I do know is that it’s my favorite comfort food. I love to make gigantic batches and freeze it for later. This Grill Roasted Tomato Sauce is a grill-tastic vegetarian version of my childhood favorite and a great way to sneak those veggies in to a meal.

My fantastic grandmother served this salad one evening with dinner. Cucumber Salad with Balsamic Vinaigrette is supremely light, and packs a flavor punch that you are not expecting. Adding the onion and carrots elevates this side from possibly pickles to positively divine. It is unexpected and fresh. It would make a great topping for a turkey or veggie burger, or perfect for pretty much any meal where you need a quick and light side.

Rotisserie Leg of Lamb with Stuffing is a roast that is out of the ordinary in many ways. I bought the cut of meat knowing that the bone was removed, but didn’t realize that the whole thing had been more or less butterflied (duh). Having that available space gave me an idea for a very delectable meal. Usually I would crust the outside of the lamb with savory herbs, but this time I wanted to fill the inside! So I created a quasi-stuffing with some panko and herbs, then tied everything up, and seasoned the outside very simply. Using the rotisserie the outside of the Leg of Lamb caramelized, and in the end, we ended up with a beautiful looking, delicious dinner.

I've been trying to find ways to sneak avocados into more food. They're super good for you, but there is just something about the green mushy thing that I can't figure out. They're also like bananas, unripe forever, then you have a day or so of perfection, then suddenly they're gross! Just got to get into the avocado groove I guess. Anyway, I had such success with the awesome, creamy, and delightful Thai Chilli Guacamole, that when my co-worker and fellow foodie was telling about this incredible guac he made, I just had to try it. Since then I have made Fully Loaded Guacamole about 4 more times.

I prepared Creamy Onion Poppyseed Dressing to go with my Lamb Sliders for Mother's Day luncheon and it paired perfectly. Lamb has an earthy flavor that needs to be lightened up with colorful and bright flavors meaning a fresh salad is perfect, and Creamy Onion Poppyseed Dressing sticks to that salad's bones when you use it.  It's thick, and has all the makings of a perfect dressing. The tang, the sweet and onions.
