Parmesan Crusted Mashed Potatoes are creamy, crunchy and have a slightly spicy kick that can’t be beat! The parmesan cheese adds the perfect notes of cheesiness to the whole dish making these mashed potatoes shine.

I was surprised when serving this for dinner. When I scooped them out (the sides and bottom of the potatoes) the ones touching the sides of the dish, had crisp-i-fied too while they cooked! YUM. I love crispy mashed potatoes. Don’t you?

There's a bit of a story with these Fried Catfish Tacos With Spicy Sour Cream And Avocado Coleslaw. When I was a lot younger, back in my picky eater days, I was watching a show whose main characters were focused on a Mexican family and fish tacos. They were obsessed with fish tacos. I couldn't dream of ever contaminating my tortillas with fish! Fast forward many years, and I have to try making these tacos. What happened? I still remember the revulsion of my younger self. However, I am now older an adult and have more adventurous tastes. Right? Honestly, these were delicious. The fish was crispy on the outside, well seasoned inside. The coleslaw with cheese on top, ohhh and the cream sauce bringing it all together... It was fishy heaven wrapped in a tortilla. Or something. Eat it yourself. You will understand.

Oatmeal, Cranberry, Bacon, Chocolate Chip Cookies came from a desire to make a slightly themed Christmas Brunch. Theme was Bacon and Eggs, but we weren't planning on a sit-down meal. Rather we thought we would make finger foods that we could enjoy while conversing and opening gifts. These cookies aren't overly sweet, but the smokiness of the bacon, tartness of the cranberries, and the hit of chocolate creates a symphony of perfect cookiness.

This year instead of a traditional Christmas Dinner, we're going to have Christmas Brunch with the family. We plan on putting on a big spread with Mini Quiche, Fresh Biscuits, fruit and cheese trays, Bacon, Cranberry, Chocolate Chip Oatmeal Cookies, and of course these Homemade Sausage Rolls. We are definitely thinking outside the hotdog bun this year. These Sausage Rolls are made from freshly ground pork meat that we seasoned ourselves and you will love the results if you do the same.

Imagine having the most delicious baked potato, but instead of in the skin, it's in a dish, just mashed potatoes. I don't think I am describing this well. These Fully Loaded Baked Mashed Potatoes are amazing. Loaded with all of the flavor of a baked potato, but in a gravy holding, mouth watering, soft and delicious package. I baked these potatoes with the turkey over charcoal, then mashed them with all of the delightful fillings you would put on a baked potato.

Autumn Baked Brie With Apples, Cinnamon, Pecans, and Cranberries is a cheesy, gooey, delight. Feel's kind of high brow, and can be served as an appetizer with wine, or as a dessert, with wine. I guess you don't have to serve it with wine, but yeah. The wheel was a buffalo brie from Prince Edward County. It wasn't strong like brie cheese tends to be, but mild and salty, pairing beautifully with the sweetness of the apples and brown sugar, and the tartness of the cranberries.
