I’ve made these Maple Dijon Roasted Carrots a few times. It is the dish most often requested when I offer to bring something to family functions. This is a side dish that adds a bright pop of color to your table. The deep roasted flavor of the carrots pairs perfectly with whatever dish you serve. You can use regular carrots, go fancy with young carrots with the green tops still on, or even get really crazy and use brightly colored heirloom carrots.  However you slice or peel them, this side dish is de-lilsh!

After another quiet Halloween, we ended up with a ton of chocolaty treats. What better way to use up leftover candy than to make a Chocolate & Peanut Butter Cake With Reese Peanut Butter Cups. This dense and rich cake is bracketed by light and fluffy layers of peanut butter icing, topped with chopped peanut butter cups and drizzled with silky ganache. To celebrate National Chocolate Day on October 28th, I created three savory dishes that prove Chocolate isn’t just for dessert. After experimenting with a few different applications of chocolate in savory food, it was decided that I had to use the real thing in a dish. Also, it’s nearly November, something warming, like a stew, was definitely needed as well. This Spicy Chili with Dark Chocolate is the strangest chili that I have ever made, though it is certainly the most delicious. If you need a warm bowl of yum on a cool day, you need to try this chili.

It’s National Cheese Curd Day on the 15th of October. A day that all Canadians, and fans of this Canadian cuisine staple, to go out and celebrate by indulging in copious amounts of deep fried potatoes, cheese curds, and gravy with all of the passion of an avid hockey fan watching the winning goal. Grilled Foil Packet Poutine is a great way to make individual or sharable pouches of semi-portable poutine for consumption. This is an easy recipe that you can also make while camping.

Roast chicken is an easy way to prepare a family dinner to celebrate a major event like Thanksgiving. It’s also a more economic option to buying a whole roasting turkey which can get a little expensive. Roast Chicken Injected with Sweet Chili & Butter came about when I wanted to do something a little different with my side dish, Roasted Acorn Squash with Chili and Masala. The cinnamon, nutmeg, and cumin blended beautifully, pairing well with the heat from the roasted squash. The sweet chili and butter injection kept the meat ridiculously succulent.

In preparation for National Coffee Day on September 29th, I used my grill to smoke, and roast some green-unroasted coffee beans. Yes, you too can make your own Smoked Coffee using a grill! It was a little nerve wracking at first, but once I got everything moving, it turned out to be super easy.
