It happened swiftly, shortly after dinner one night; the craving for chocolate struck like lightning. We didn’t really have anything for dessert to stave off this craving, just a bunch of seemingly random ingredients. Or were they? I managed to whip up this 3 Ingredient Chocolate Mousse With Smoked Cream in about 15 minutes (pun intended). The hardest part was waiting for it to set in the fridge before eating.

No Churn Coffee Ice Cream with Chocolate Coffee Ganache is the kind of caffeinated sweet treat that will perk you up on a hot day in more ways than one. I was making homemade ice cream for a friend one day. While sipping my coffee and whipping the cream for the recipe it hit me. I should make coffee ice cream too! I had all of the ingredients to do it, so why not? I brewed up a fresh cup, using it to help melt the chocolate for the ganache. I added chocolate covered coffee beans to the recipe too. This has to be my favorite homemade ice cream so far. It may very well be yours too.

There's a bit of a story with these Fried Catfish Tacos With Spicy Sour Cream And Avocado Coleslaw. When I was a lot younger, back in my picky eater days, I was watching a show whose main characters were focused on a Mexican family and fish tacos. They were obsessed with fish tacos. I couldn't dream of ever contaminating my tortillas with fish! Fast forward many years, and I have to try making these tacos. What happened? I still remember the revulsion of my younger self. However, I am now older an adult and have more adventurous tastes. Right? Honestly, these were delicious. The fish was crispy on the outside, well seasoned inside. The coleslaw with cheese on top, ohhh and the cream sauce bringing it all together... It was fishy heaven wrapped in a tortilla. Or something. Eat it yourself. You will understand.

Steak Diane is a  decadent little meal that is supremely enjoyable. The steak is tender and flavorful, the sauce is amazing, (But anything that is made with whisky and heavy cream would be right?), and everything else on the plate just makes it that much more delightful. I actually made this because I had nothing else in the house for food. I cook a lot and need groceries a lot, it's a thing. Anyway, I just happened to have some beef tenderloin, the ends that were trimmed from the Beef Wellington Recipe, the other ingredients... not so much, but it sure was delicious.

Roasted Mashed Potatoes With Paprika & Aged Cheddar are super simple but pack a huge punch. I know that my Irish Grandfather is weeping as he reads this because "potatoes are good on their own and don't need any help!" but let me tell you. Paprika, smoke, aged cheddar = help! You can make these ahead, which is what I did, and then finish them off on the grill while everything else is keeping warm. Also, having extras to share, reheat, and re-eat is so awesome.

On the 27th of ever July, it is National Scotch Day. To honor that I made Whisky Apple Chicken with some 15 year aged Glenlivet. Now before you freak out about the wastage of decent scotch, hear me out. It was a sample bottle and held just enough to make the recipe, and it was also not my Glenfiddich 18 or 30. I was dubious about the flavor combinations, and unsure of what to serve with this, but went with sweet potato purée which was complimented by the sweetness from the apples very nicely.

Creamy, Crunchy Scalloped Potatoes feature the best of both worlds when it comes to texture. Then there's the flavor. You won't get this kind of awesome from a box. No sir! It may take a little prep work but this side dish is completely worth the added labor. Although, getting into that box of "scalloped potatoes" that's been in your pantry for who knows how long is really a lot of work. This recipe is far easier than trying to stick your thumb through that "perforated" top. And when you can't do that you resort to using a knife, which works, but you stab the packet with the flavor powder in it. The powder goes everywhere and you have the dog licking at the floor and you haven't even gotten to the cooking part yet. Naw, go the route of home made and save yourself the hassle. Plus you get all the flavor!

These Fully Loaded Baked Scalloped Potatoes are a mouthful to say, but they're worth it. I mean, Scalloped Potatoes are already a near perfect dish with the cheese and sauce and potatoes all baked into some sort of heavenly feast. Then you go and add your favorite fixings for Baked Potatoes, bacon, chives, garlic, and sour cream. Stick that in your grill and bake it! I mean it! You have to try these potatoes!
