I’ve made these Maple Dijon Roasted Carrots a few times. It is the dish most often requested when I offer to bring something to family functions. This is a side dish that adds a bright pop of color to your table. The deep roasted flavor of the carrots pairs perfectly with whatever dish you serve. You can use regular carrots, go fancy with young carrots with the green tops still on, or even get really crazy and use brightly colored heirloom carrots.  However you slice or peel them, this side dish is de-lilsh!

Simple Roasted Heirloom Carrots are just that. Super simple. I needed a side dish to go with our Thanksgiving meal, something fast, simple, set and forget while I worked on the important main course. These carrots look like a showstopper, but you don't have to tell them how easy it was to make. They're buttery, and flavorful, and the bright colors of the purple and yellow carrots stand out in the field of regular orange ones so that people take note of the dish. You will run out. They're that good.

Whether it's for a nice family dinner, or something a little more romantic, Rosemary Grilled Pork Roast With Roasted Heirloom Carrots is definitely a meal that will please the mother-in-law and the romantic partner. The best part about this recipe is that you don't have to be a crazy good gourmet chef to make it happen. You just need some bacon fat, garlic, and a roast.  ...well I guess you need a grill too.
