Originally making their way onto the blog in April of 2011, these Plank Grilled Potato Skins, made a great snack for when you’re watching the big game, like the Stanley Cup Playoffs, or… Game of Thrones. Think of these Plank Grilled Potato Skins like Irish Nachos; filled with all of the good stuff! Needless to say, we polished them off pretty quick. Make a little extra Alabama White Barbecue Sauce, that stuff is flippin’ good for dipping and drizzling! Once the potatoes are sliced and on the grill for crisping up, things will move fast. Make sure to have everything for topping them ready beforehand.

You know, some of my best recipes come from somehow messing up. Getting the wrong ingredient, not having all of the ingredients, or some other such mishap. That’s how Fully Loaded, Crispy, Potato Salad came about. I realized that I only had baking potatoes when my husband had a hankering for potato salad one evening. I figured everything would be alright, so I proceeded as normal. I peeled, sliced, and boiled, but I wound up overcooking the potatoes. To save things, I decided to make them crispy potatoes. After that decision, I wound up undercooking the eggs too! This was fine with me, but definitely not in accordance with the way you make potato salad. As I see these ingredients coming together I decided to roll with it. What’s better with eggs than bacon? I was also using baking potatoes, so under all that crunchy outside was a light and fluffy inside, another perfect place to put bacon. When all was said and done, it was like eating forkfuls of baked potato and breakfast wrapped into one, delicious, summery, side dish. It was amazing.

I’m sorry; I can’t do that. It would be sacrilicious. I mean, yeah, they’re good as dinner rolls to accompany some sort of grilled delight, but why stop there? Why not worship a little roll of the best bread flavor – sourdough is a flavor right? – by making these buns of heavenly deliciousness into a breakfast that would top all of the top ten sandwich lists.

This recipe began as a sad failure. Though not in the way you would expect. I tried to make the Vanilla Bean Shortbread using gluten free flour. The cookies ... well I don't know what they did. I rolled them, and cut them, and they just, kind of, melted. They didn't exactly get crispy. They definitely did not hold their shape. I peeled them off the cookie sheet after baking and placed them onto a plate where they proceeded to melt into some sort of blob of shortbread. I really didn't want to waste such delicious amounts of butter and sugar, but what was I going to do with a literal BLOB of cookie. Then I thought, why not add peanut butter, chocolate and bacon? Peanut Butter Bacon Balls were born. Think cake pops without sticks and with cookie instead of cake.

When you slice your newly homemade bacon, you invariably get bits, chunks, slices that aren't pretty, and leavings. You can't just toss these little scraps. That would be offensive. You would be arrested by the Bacon Police for crimes against the bacon! That's where these Bacon Chocolate Chip Banana Muffins come in. I used some of the bacon ends in these delicious breakfast muffins that do more than smell delicious. They're fairly healthy, you can make them gluten free and egg free easily. There is little sugar in these too. Until you add the chocolate chips. But if you're REALLY being health conscious with these bacon-full muffins, craisins are a great addition instead.

Homemade Smoky Southwest Bacon is da bomb! Okay I say that everything I make is the best thing ever, but this! THIS! This bacon will be, undoubtedly, the bestest, most awesome, heavenliest, amazariffic thing you have ever tasted in your entire life. That is if you're into bacon. So we've done planked bacon, and homemade bacon, but there is so much more you can do with bacon, than bacon. Or just subtly changing bacon into tastier bacon. Does that make sense? If not, just make this recipe. You will understand the nirvana that is bacon when you finish it. 

I must say that waiting the 10 days for it to cure was possibly the hardest thing we have ever done. But when you have homemade bacon and compare it to the stuff you get in stores, there is nothing even close. It's like eating unseasoned, low grade, ground beef and calling it a steak, and then having someone prepare you a filet mignon, done to a perfect medium rare. You're not going to turn back from that.
