It is mid-afternoon on a Tuesday, when I get a text. My friend is in town and wants to come for a visit. Naturally I ask if she wants dinner. (Me and my big texting fingers) But what do I make? I haven’t got a heck of a lot in the fridge and certainly was not prepared for guests. But, from the few things on hand, came a delicious sandwich that rocked our worlds! … well our taste buds anyway.

The sandwich has a rich and varied history, as does the "open faced" sandwich. Although, without two pieces of bread, can it still be called a sandwich? That is for you to decide. All that is known is that this recipe is delicious and needs a fork and knife to eat.

This beauty of bread and meat mingling was invented around the 1930's in Philadelphia. Traditional cheeses used are Provalone, American and (shudder) Cheese Whiz. Cuts of beef used are generally rib-eye or top round.
Today we pay hommage to the majestic cheesesteak with this grilled version...All poetry and word-smithing aside, this sandwich of steak-tackular proportions is just epic, and there is plenty to go around!

Why is it when you go grocery shopping, you inevitably wind up hungry? While out getting supplies for the next round of barbecuing, I stumbled upon a charity type barbecue. Naturally hungry, because I was grocery shopping, I ordered a chicken burger. What I received was a chicken cutlet that had some sort of breaded coating on it. It felt a little greasy even though it was grilled. It was rather depressing, even if it was one of the better chicken burgers. I know you know the ones I am talking about. Those gross pressed, you hope its meat, patties covered in breaded coating and you have to drown it in ketchup to eat it. Cafeteria food, that seemed the bee’s knees when you were young but realize now is totally wrong.

So there you have it. Inspiration strikes once more, like a shovel to the back of your head. REAL chicken burgers. Immediately I set out to find a decent recipe and see what a real chicken burger was all about. This is what I found.

I was at the Tragically Hip concert in Bobcaygeon on Saturday. What a great show! The weather was not the greatest, but the food! OH the FOOD!  So much to choose from, and all of it great! One of the best things there was the back bacon on a bun. Usually I would slap an egg and some cheese with back bacon, or at least some hollandaise sauce, but this was some sort of barbecue sauced grilled heaven. I was bound and determined to find a recipe for it when I got home, and slept for most of the next day.

The name and recipe may be long, but these fajitas are realmente muy bueno! This, naturally, is a dish best shared with others. It should be served fresh and in a “build your own” fashion. Fajitas are muy fácil, but they can be time consuming. To prevent constantly running back and forth to the kitchen, be organized. Estar preparados, do all the preparations ahead of time and arrange around the grill.

TIP: Cross-contamination. An ugly term. Never put cooked meat on anything but a clean surface. Raw and cooked meats must never ever meet. Food poisoning is often caused by carelessness. Don’t send your guests home with that type of souvenir. It would be muy malo.

Well it is true. Most everything is better wrapped in bacon. These burgers are as well. Once again using the magical beast where comes from bacon, pork and ham, we shall create a delicious meal of pork-tacular proportions! (And have a little salad too)

The Victoria Day long weekend is coming. No May-24, as we Canucks call it, would be complete without a great burger (and beer). But this burger isn’t just great, like fantastic great, but its HUGE too. Although it is a big’un you’ll be wanting more anyway.
