Three Cheese Grilled Cheese With Roasted Red Peppers, Bacon & Onion happened by accident. Yep. The cheese just landed like that and layered into a perfect sandwich with the roasted peppers. Okay, not really. But I was standing in the kitchen wondering what the heck I was going to grill, considering I forgot to pull out some meat before going to the gym that morning. My eyes alighted on a sourdough loaf lounging there on the counter, beckoning me to just slice it and eat it right then and there. And I thought to myself that would make some pretty darn good grilled cheese. So I opened the refrigerator, and noticed that, not only did I have some cheddar, the best cheese ever, but I had goat cheese and Monterey Jack too. Rummaging further, looking for the butter, I saw peppers and an onion, lazily sitting there, being all good for nothing. Actually the pepper was pointing at the bacon, hoping not to be noticed itself I guess. So bacon joined the growing ingredients list too. Finally I had it.
