Sticky Rum Pudding With Cream was inspired by a visit last weekend with the Husband's Granny. We were making fun of my lower than average tolerance of alcohol, and her amazing rum cake that I managed to get drunk off of, all while enjoying a restaurant's version of Sticky Toffee Pudding. I had this brilliant idea to make the cake in little bundt tins, not the full sized one, and have individual, beautiful, little puddings. Their middles would be filled to overflowing with the Sticky Toffee sauce, and you would top it all with cream. So imagine, if you will, a perfect marriage of a rum and date cake with a boozy toffee sauce, served hot, with ice cold cream on top. Let's just say we were all right happy at the end of the evening.

Usually my go to comfort dessert is Apple Crisp, but we were out of apples. So I opted to use nectarines instead, and thus Nectarine Crumble In A Cast Iron Skillet was born. This dessert comes together pretty quickly and the end result smells and tastes beautiful. Placing the still steaming fruit onto a bed of fresh vanilla bean ice cream just takes these nectarines to the next level. Now I bet you're wondering, what happens if I have a bad batch of nectarines? Well I actually DID have a bad batch, they weren't juicy, but pasty when they're ripe. If that's the case, this dessert will take these horrible and tasteless fruits and turn them into a dessert fit for kings, and queens, and little princes or princesses.

Last week we posted a recipe for Bacon Bourbon Chocolate Chip Cookies on our Facebook page. It was a re-share of a share - well you know how it goes, but I want to thank the Recipe Girl for the original recipe which you will find here!! Basically I couldn't not try making these. I did not make them Gluten Free and they were enough to entice someone who shouldn't be eating gluten to eat at least five cookies! She told me later that it was well beyond worth it. The husband's co-workers? Totally beyond jealous. Seriously. Grown men, carpenters, openly weeping as he eats the cookies in front of them, smirking.

I needed something to serve to guests on a Sunday evening, and I also needed a nutritious breakfast for the next day. So I decided to make some Candied Pecan Banana Bread. This quick bread recipe is not only moist and tasty as any banana bread should be, but it's actually full of things that are pretty good for you too. I used gluten free flour and you couldn't tell the difference, which is rare, and the candied nut topping gave you a satisfying crunch to top it all off. You'd never guess that this was made on the grill. Oh, did I mention that it's also versatile as heck too? You can throw it in a loaf pan for quick bread, muffin tins, mini loaves - which make fantastic little gifts, and even a cake pan if you wanted. You just have to remember to watch that baking time.

Part of celebrating Cinco De Mayo is having a fantastic dessert to go with your amazing meal. I was going to do some sort of "Mexican" food like a quesadila or chimichanga filled with fruit and chocolate, but I had all these limes and tequila, and let's face it, you know my opinion on cheesecake. So I made Margarita Curd Cheesecake instead. First of all I was quite inspired by a dessert I taste tested at Costco a few weeks back and fully intended on recreating - a lemon curd, crumble topped cheesecake pie, and with Cinco De Mayo around the corner too, I had all the stuff to make a rockin' lime curd. Well I added tequila and things got a little out of hand, and into my mouth. You have to make this delicious, creamy dessert.

Okay well the fact that they're gooey and rich, featuring the epitome of the coveted easter candies to make something that is already one of the best things on earth just that much better. Imagine yourself biting into a dense, fudgy brownie and your teeth sink through a layer of milk chocolate that reveals a hidden gem of creamy egg middle-ness that drips onto your chin!  ...I may be a little passionate about these brownies. It was posted by a friend, who liked it from somewhere else etc. But there it was a giant gooey square of delight, I think the article said Stuffed Blondies, or something like that. From there I built this recipe for Buttery Coconut Blondies Stuffed With Nutella. How can I even describe these? They're square, they're yummy, they're not brownies. Yep.
